Local food - Elderberries

15 August 2008
Elderberries

Elderberries are often known as the Englishman's grape and analysis shows that they contain many of the same nutritional elements, with elderberries being even richer than grapes particularly in Vitamins A and C.

Just type 'elderberry recipes' into your favourite search engine to find lots of tasty ways to incorporate this natural fruit into your diet. This food is growing wild, so as long as you don't drive a 4X4 or sportscar to go and pick them, using this food resource should save carbon emissions and money too.

WATER
The availability of fresh water will decline, according to the UN, who project that by 2025 1.8bn people will be affected by water scarcity. Sanitation is also a major issue, as contaminated water is the greatest single cause of human disease and death. The state of the world's fisheries is also touched on by the report which says many fish stocks are overexploited, while the demand for fish is expected to rise alongside growing populations.
